4 tablespoons extra virgin olive oil
1 stalk celery, halved crosswise
2 inches fresh ginger, peeled
7 cloves garlic, peeled
2 handfuls fresh parsley
1 handful fresh mint
1 handful fresh basil
Salt and freshly ground pepper to taste
White pepper to taste
2 lemons
1 whole blue fish, 4-5 pounds, gutted and cleaned
1. Preheat the oven to 350 degrees and brush a baking dish large enough to hold the fish with 1 tablespoon of the olive oil.
2. Put the celery, ginger, garlic, parsley, mint, basil, salt and freshly ground pepper, and white pepper in a blender or food processor and purée.
3. Rub the fish inside and out with the remaining 3 tablespoons of oil, the juice of 1 of the lemons, then the garlic-herb mixture. Place the fish in the baking dish and bake for 30 minutes. Lower the oven to 250 and continue baking until the fish flakes, about 30 minutes more. Thinly slice the second lemon into rounds and use them to garnish the fish before serving.
