Into a deep cast-iron pot, pour 48 oz. of chicken broth. Into the chicken broth place a large onion or 2 medium onions or the equivalent amount of shallots, quartered, 1 chopped bunch of spinach, 1 chopped bunch of green kale, 2 large chopped carrots, a chopped bunch of parsley, either kind, and any other extra clean chopped green vegetables you might have lying around. Bring to a boil, cover, and simmer very gently for about two hours. Strain the broth and serve hot in individual bowls with bits of chopped tarragon or chives (or both) floating on top.
