For many, vegetarian main dishes are the hard ones to figure out. Salads and sides are a snap, but the main event? I've long wanted to write a book that brings together a collection of recipes that answer the question "What's for dinner?" Or, in this case, what's for supper.
For me, a dinner is an all-out event that takes planning, candles, ironed linens, flowers and money—the whole nine yards. I love giving dinner parties and do so frequently, but really, it's supper that I cook most of the time. Suppers have a more relaxing, friendly, easy sense about them, and that's why I like them. And they work fine for company, too.
The recipes in Vegetarian Suppers from Deborah Madison's Kitchen fall somewhere between the bowl of cereal and the all-out dinner party. Suppers are what my husband and I cook for ourselves, and perhaps enjoy with neighbors on a weekday night—or a weekend for that matter. They're great but manageable dishes that break the mold of what we usually think the last meal of the day should be. After all, if you can eat cereal for dinner, or a frozen meal, or skip it altogether, why not a fried egg sandwich and a glass of champagne?
Some recipes are more everyday than others—you'll be able to tell which ones are easy for you and which ones are more complicated. But all have wine suggestions supplied by expert-friend and neighbor, Greg O'Byrne; there are once again Laurie Smith's beautiful photographs, and those recipes that aren't vegan are paired with suggestions that will make them so.
